Brakes expands fish range to tie in with Fish Week

Brakes has launched two new fish products – initially to tie in with this month’s Fish Week promotion but also with the Christmas trade.

A spokesman for the foodservice specialist said carpaccio (or ceviche) dishes are growing in popularity in the out-of-home sector (pubs, hotels, restaurants and contract catering) following similar trends in North America.

The new Scotch whisky cured cold smoked salmon portion is available boneless, but with the skin still on for a ‘just caught’ appearance on the plate.

The 140-170g pieces are individually frozen, 10 to a pack.
